Cucumber Relish

Summer is over and fall is making a dramatic entrance with amazing splash of color and cold weather lurking around especially at night time. And speaking of cold weather, it's the time of the year again where my appetite is very active. LOL.
the last pick of the season

The cold nights are slowly killing our veggie garden and with the last batch of cukes we picked two weeks ago, there is no way I can finish them off in a week's time. I have given away some every chance I got since we started harvesting from the garden, but this time my friend won't take anymore because just like me, we're tired of cucumbers already.

Well, I don't want them to go bad so I made cucumber relish. I tried to find some recipes online but I can't find anything that I really like so I just made it up.

Yes, I made an experiment and I want to share it with you.
 First... wash the cucumber.
Then, peel them.
And slice them.
Then, grate them and set aside to drain some of the excess water.
Next, slice 3 medium bell peppers (I used red, yellow and orange peppers) and 1 large onion. Then I added one package of julienne cut carrots.
Next, I added the grated cucumber...
... and mix them all up to have a happy party.
Then, in a bowl, I mix together 2 cups of apple cider vinegar, 1 cup water, 1 cup sugar (I used the raw stevia kind because my friend is diabetic), 1 teaspoon of ground ginger, 1 teaspoon of ground pepper, 1 teaspoon of sea salt. I pour the liquid in a sauce pan and bring it to boil.
Lastly, I poured the cooled mixture in the cucumber and veggie party and let it sit for few minutes.
Then, I put them in the bottle.
I did not bother to do a bottle bath, (which I only found out how to do it after I already put all the caps on) because I was just too excited with my experiment.

My hubby was kinda worried when he found out that I didn't seal the bottles correctly and let alone horrified that I didn't do the bath. Well, what for? I don't believe that those babies will last for 6 months since I will be eating it with every single meal I'll have.

I made about 7 bottles, I gave away 4 of them. My friend finished the entire bottle in one meal and she begged me to give her another bottle. There you go, just as I thought - the bath isn't necessary at all! wink*

Changing Season

Finally, it's here and I am so excited. It's the season I've been waiting for.  There is something special about this season for me.
Fall is not just my favorite season, it is the most important season for me.
It is the time of the year that I really enjoy doing outdoors activities despite the cold weather. The sight... the sound... the taste... the feel... I can't help but fall in love with it.
Here in Maine, this is the time of the year when I enjoy the outdoors whether running or walking or most of the time... photo walking.
So here are some of the photos I took from the past 6 years of my New England Fall.

Changing season is inevitable, I hope you enjoy my photos.

My Two Questions and Thursday Thoughts to ponder:

HongKong in 1997 - Part 1

I love to travel. I was seriously infected by a travel bug since time immemorial. LOL. [Exaggeration Alert!] Well, my first trip out of My Philippines was in HongKong in 1997 with my BFFs.
It was totally a new experience to me. The thrill was undeniably out-of-this-world. It was one of the many happy and memorable experiences I had with my BFFs.
I enjoyed seeing this beautiful island south of China. And during that time of our visit, HongKong was in preparation for its return to China from British protectorate. It was indeed a historical event and I was lucky to be there when HongKong's 150 years of British control ended.
The preparation did not really interfere with our fun because everything seemed normal there. My friends and I just enjoyed the sights and sound of this famous city.
We particularly enjoyed the promenade where we can see the amazing skyscraper across the busy river.

There are only one of the awesome places we visited in HongKong and I will surely write and share more photos of the other places in HongKong where we went.
However, please be reminded that these photos were taken 16 years ago so a lot of changes has been done to the city. I am sharing this memorable trip based on my 1997 experience. I would love to share a more recent photos and experiences when I get the chance to visit it again in the near future. Maybe when I come to visit my brother who is currently living and working in this great city.

Summer came and now gone.
Now, I have to wait all year again for it to come. Hays... the joys of summer memories will be used to warm up my cold days of fall and winter.

Wine Charmers

Everybody needs accessories and everything or anything can be accessorized.
So I came up with wine glasses charms for special parties.
Accessories wine glasses with these cute charms that can be personalized to make your party extra special.
And when we are speaking of wine, it is always hard to tell which glass is yours then you are drinking from identical glasses. So accessorizing will help your guests identify which glasses they are drinking from.
You can choose the charm the fits your personality or the theme of your party.
And yes, we can personalize it according to your need or according to occasion.

A Luau Party

Last year, a nice young lady commissioned me to make some souvenir items for her birthday party. It was a Luau Party Theme. She asked me if I can make her some key chains and necklaces for her guests.
And what would I say... of course, yes!
These are the souvenir items she asked. A tiki head key chains for the guys and a flower pendant necklaces for the gals.
I made a special personalized card where I attached the souvenir items that said her name and date of the party.
The tiki head is attached to a chained key holder.
While the flower pendant sits on a glass stone with leather necklace.
She ordered a dozen of each kind and I delivered on time. She is one happy customer.
So, if you like what you saw here and if you have a party coming up, why not consider this great option for a party favor.
I can probably make your next party unique and memorable. Just give me a shout and let's do some party planning.
