Cod Fish Sinigang (Cod fish in Tamarind Soup)
Ingredients:
1 1/2 cod fish 1 bunch of kale (stem removed)
3 medium size tomatoes (quartered)
1 big white onion (quatered)
1 medium eggplant (sliced)
1 package of tamarind mix 5 cups of water or rice wash salt and pepper to taste
Cooking procedure:
1. Put tomatoes, onion, eggplant and fish in pot.
2. Pour 5 cups of water and tamarind mix. Bring it to boil.
3. Add kale. Cover and let it boil for 2 more minutes.
4. Adjust taste with salt and pepper and you're done.
* Serve with steamed rice. Sinigang is a tamarind based soup which is a Filipino dish.
For us Filipinos outside the Philippines, Sinigang is not just a dish... it's a comfort food. This version is not really the real sinigang that I remember my Lola (grandmother) and Mom used to cook since the ingredients they use back home are not available here. So this one is "my version" because I used "kale" for the leafy green. And I was surprised that I liked it better than the original version.
