Cucumber Relish

Summer is over and fall is making a dramatic entrance with amazing splash of color and cold weather lurking around especially at night time. And speaking of cold weather, it's the time of the year again where my appetite is very active. LOL.

The cold nights are slowly killing our veggie garden and with the last batch of cukes we picked two weeks ago, there is no way I can finish them off in a week's time. I have given away some every chance I got since we started harvesting from the garden, but this time my friend won't take anymore because just like me, we're tired of cucumbers already.

Well, I don't want them to go bad so I made cucumber relish. I tried to find some recipes online but I can't find anything that I really like so I just made it up. 

Yes, I made an experiment and I want to share it with you.
 First... wash the cucumber.
Then, peel them.
And slice them.
Then, grate them and set aside to drain some of the excess water.
Next, slice 3 medium bell peppers (I used red, yellow and orange peppers) and 1 large onion. Then I added one package of julienne cut carrots. 
Next, I added the grated cucumber...
... and mix them all up to have a happy party.
Then, in a bowl, I mix together 2 cups of apple cider vinegar, 1 cup water, 1 cup sugar (I used the raw stevia kind because my friend is diabetic), 1 teaspoon of ground ginger, 1 teaspoon of ground pepper, 1 teaspoon of sea salt. I pour the liquid in a sauce pan and bring it to boil.
Lastly, I poured the cooled mixture in the cucumber and veggie party and let it sit for few minutes.
Then, I put them in the bottle.
I did not bother to do a bottle bath, (which I only found out how to do it after I already put all the caps on) because I was just too excited with my experiment.

My hubby was kinda worried when he found out that I didn't seal the bottles correctly and let alone horrified that I didn't do the bath. Well, what for? I don't believe that those babies will last for 6 months since I will be eating it with every single meal I'll have.

I made about 7 bottles, I gave away 4 of them. My friend finished the entire bottle in one meal and she begged me to give her another bottle. There you go, just as I thought - the bath isn't necessary at all! wink*
