GF Banana-Oatmeal Breakfast Muffins

It's officially my Summer Vacay here in my neck-of-the-woods so the kitchen smells like heaven. Well, it's because when I am not working, I am constantly eating. And when I want to eat I need to cook. And so yes, I find time to cook and bake and yes.... do some gardening.

So here I am hungry still after I had my herb salad with strawberry slices drizzled with homemade honey mustard dressing.
So I decided to finally make another experimental baking. I have been craving for oatmeal lately but I am so tired of eating it the traditional way so I went to Pinterest for inspiration for muffins or cookies with oatmeal as the main ingredients. And viola! It didn't disappoint. I found one and as I usually do, I made a little tweaking and alteration to suit my needs and whatever ingredients I have at hand.



So let me share with you my new creation!
GF Banana-Oatmeal Breakfast Muffins
with dried cranberries and chopped walnuts


Gluten Free Banana-Oatmeal Breakfast Muffins
You need:
3 ripe bananas
2 eggs
1 cup almond milk
1 tbsp baking soda
3 cups GF rolled oats (I used the traditional rolled oats not the "instant")
*1/2 cup almond flour (I added this ingredients to the second batch. The texture is a little dense but still yummy.)
1 tsp vanilla extract
3 tsp ground cinnamon 
Additional Ingredients: 
First batch: 1/4 cup dried cranberries and 1/4 cup chopped walnuts
Second batch: 2 tbsp of my homemade cranberry sauce with organic chia (recipe will be posted separately)
*Your version: You can add dried or fresh fruits and nuts of your choice. 
Baking Instruction: 
1. Preheat oven to 375 degrees
2. Mash ripe bananas with fork until free of lumps.
3. Mix in the the rest of the ingredients and stir well.
*4. At this point, you have the option to divide the mixture into 2 or 3 parts to have a variety of flavors. But it's all up to you. This is also when you want to put the "additional ingredients" that you like.
5. Scoop the mixture and put into muffin tins.
6. Bake for 20 minutes.
7. Once done, remove from oven and cool the muffins in the rack.
8. Enjoy!!!!

Warning: This is not just for breakfast. I could eat it anytime without guilt. Well, with moderation of course.
